Thoughtful Baking Co.

Thoughtful Baking Co.

Thoughtful Baking Co. is a Charlotte bakery that makes scratch-made pot pies, quiches and shepherd’s pies. Chef Mary Jayne Wilson started it in 2021 and sold at farmers markets for years. In 2026 she opened a storefront at 4418 Monroe Rd in Oakhurst.

The Chicken Pot Pie has a butter crust made with North Carolina flour and is filled with pasture-raised chicken, carrots, celery, peas, potatoes and herbs. There is a vegan pot pie with shiitake mushrooms and zucchini. The quiches use local eggs and Riverbend Creamery dairy, and there is a gluten-free hashbrown crust. The menu changes with the harvest. Family size feeds about four, and the individual size is a large single serving.

Wilson is a North Carolina native who trained at Johnson & Wales University Charlotte and spent nine years at Amélie’s French Bakery. Her farm partners include Barbee Farms in Concord and Urban Gourmet Farms in Charlotte. She told WhatNow that the farmers markets became a community she valued, and that a storefront would let her grow the business without worrying about the weather.

Online pre-orders open on Mondays at 10 a.m. and close Thursdays at 5 p.m. The shop is open Wednesday through Friday, 10 a.m. to 6 p.m., and Saturday, 10 a.m. to 2 p.m. Frozen pies can go straight into your oven.
